Course Overview
The Diploma in Culinary Arts at City University Malaysia is the “Professional Kitchen Intensive.” It is designed to transform food enthusiasts into skilled chefs who are equally comfortable preparing traditional Malaysian flavors and sophisticated global dishes. This program is built on immersion. You will spend the majority of your time away from the whiteboard and behind the stove. In our purpose-built commercial kitchens, you will master the “Five Fundamentals”: Knife Skills, Cooking Techniques (sautéing, braising, etc.), Food Safety (HACCP), Pastry Arts, and Plating. A unique feature is the Aida Brasserie, our on-campus restaurant where you will experience the high-pressure reality of Food Service, learning to cook and serve for real customers. This ensures you graduate not just with a recipe book, but with the professional stamina required for a high-end culinary career.
